It goes without saying that we love our cheese here in Wisconsin and as a grocery store in Wisconsin our selection of cheese is quite large. Our selection of cheeses includes more than just your everyday flavors, we also carry many different varieties of specialty cheeses. Along with carrying national brands we also carry several local brands of cheese. One of the brands that we carry is Ron’s Wisconsin Cheese. We have expanded our selection of Ron’s Cheese to now include, Juustolepia or Baked Cheese.

This sweet and very mild cheese originates in northern Finland and Sweden and has been made for over 200 years. Juustolepia or Leipäjuusto, as it also is known as, was originally made with reindeer milk. Milk from a cow is the most common source used today, but it can also be made with goat milk.

What makes Juustolepia different is the fact that the cheese is baked during the cheesemaking process. As the cheese is baking, the sugars on the outside of the cheese caramelize to form a crust on the top of the cheese. While the top of the cheese has a crust that is similar to brown bread beneath the crust the cheese remains smooth.
